Gluten-Free Almond Chocolate Chip Cookies

You won’t miss wheat flour when you enjoy these cookies. No added sugar is used either, as sweetness will come from the honey and chocolate.

The cookies will be very crumbly and have a sandy texture. For those who loves nutty flavors, the roasted almond taste, mixed with honey and chocolate, is incredible.

Ingredients
2 cups almond flour
1/2 teaspoon baking powder
1/3 cup butter, softened
1/2 cup honey
1 teaspoon vanilla extract
1/3 cup semisweet or dark chocolate chips (or a mixture of both)
1/4 cup almond slices

Instructions

  1. Preheat the oven to 350F.
  2. Line a large baking sheet with parchment paper.
  3. In a large mixing bowl, add almond flour and baking powder and mix well.
  4. Add melted butter, honey, and vanilla extract, and mix until combined.
  5. Fold the chocolate chips and almond slices into the dough.
  6. Form ~12 small balls of dough. Place them on the lined sheet, and press down into a cookie shape.
  7. Bake the cookies for 12-14 minutes until they are golden brown. (If you want to increase the toasted almond flavor, add another minute.)
  8. Remove them from the oven and let cool completely.
